Hi Larry,
Glad you got it working.  It is possible to override the book template if it
is done in the right part of the import sequence.   The book template that
is called inside the EXSLT directive is the original non-chunk one.  There
is also a template that matches on book (and a lot of other chunk elements
too) in chunk-code.xsl, which calls 'process-chunk-element'. That runs
apply-imports to get the original template.  I don't know how your
customization layer is set up with regard to the import sequence, but you
want to override the book template that calls process-chunk-element so it
doesn't even start the process.
