UpCast's support for DocBook output is based off of running a (provided) 
XSLT over an intermediate format to generate (the last time I looked) 
DocBook 4.2.  So, to generate 5.0x, you could:

1) tweak UpCast's DocBook stylesheet, or,
2) probably easier, run the migration stylesheets provided in the 
5.0beta distributions on the results generated by UpCast.
