But the result of docbook uses HTML entities --> ShowExt &Atilde;&frac14;berarbeitet

Another possibility: does your HTML contain

<head>
  <meta http-equiv='Content-Type' content='text/html; charset=UTF-8'> </head>

If <meta>... is missing, you may see "Ã¼",  even with a properly UTF-8 encoded 'ü'.
