Toby, I agree that Google searches might perform better (when users
think the formulation is "and"), but the better reason IIRC is that style
manuals will urge use of the word spelled out in titles rather than the
character "&".   In prose it may not matter as much, but I think "and"
is expected in the title of a work.

"Retain the spelling of the original title, but change & to and...

rcc says: I think the rule "change" assumes that the use of "&" in a title
of a work is irregular, hence "change" it to the expected convention.

It seems to be done both ways when I do a search on Google, though 'and' seems to get more results. I prefer to avoid non-alphanumeric characters in titles if I can - 'and' strikes me as more formal.
