You are right, it probably is not clear what a "sort of infinite table" 
is:-). Since spreadsheet only in theory can be infinite, but in practice 
never will be, we should drop this.

I've changed it very close to your suggestion to

"Spreadsheet applications typically operate on large tables that have a 
fixed application dependent row and column number, but may have an 
unused area. Only the used area of the table is saved in files."
