If an application has this information available, then why should it not be able to store it in the file so that other applications may make use of it. Regarding how words or sentences are counted: Well, I think it is outside the scope of the ODF specification to define how words or sentences are actually counted, because this would require that we include a definition of what a word or a sentence is. That's locale dependent, and we probably can't include definitions for all locales.
