When you've got multiple nodes in a service affinity generally means that the response will be returned to the origin node. This cuts down the amount of data needing to be pushed around in the backend, potentially to none which is a bonus. Binding differentiation at least in this context is determining which SAML protocol binding (GET, POST etc) is supported by an endpoint.
