INETCO has produced an open source AMQP 1.0 decoder (BSD license) that works with wireshark data.  You can download it from ...  http://www.inetco.com/resource-library/technology-amqp/

Note that you don't have to sign up to do the download ... although our marketing people would no doubt appreciate it.  ;-)
