It's not completely clear from this what you mean by "fonts in general". Presumably, since you're interested in changing fonts, you're aware of what they are and what they do. And it sounds like you've figured out, or are figuring out, how to change them with DocBook and FOP. So what is it you're wondering - how to tell a good font from a bad font? What fonts are appropriate for your material? The difference between Type 1 and TrueType? The details of how a font actually works?
