That list of formats is all the NOTATIONs that are declared in the DocBook DTD.  The DTD uses a parameter entity and puts the same list in imagedata (where they make sense), audiodata, and videodata.   I think the DTD has not been keeping up with all the popular file formats.  If you have a SourceForge account, you could file an RFE for the DocBook DTD to add common audio formats.
 
If you are looking for support in the *stylesheets* for audiodata, then you might be interested to know that the 'format' attribute is optional. For HTML output, any audiodata element has its fileref or entityref attribute processed into an <embed> element, regardless of format.

I was going through the docbook site for reference to examine supported formats for audiodata. This is located at www.docbook.org/tdg/en/html/audiodata.html

It lists the following below. Maybe there was a glitch in preparing the documentation since my expectation was to see AIFF WAV MP3 and other relevant audio formats. Explanation with pointer to appropriate formats appreciated
