What is the subject area?  IMHO, I wouldn't write a mathematics thesis
in anything but LaTeX, but DocBook and a decent XSLFO formatter should
be up to the task for anything else.  As mentioned by Jeffrey, the
formatter is probably the critical tool in the chain.
