In 8.1 Basic Table Model, third paragraph, third sentence reads:

Not sure what a "sort of infinite table" would look like. ;-)

How about:

"Spreadsheet applications typically operate on large tables that may 
have an unused area. Only the used area of a table is saved in
files."
