I'm not aware of any DocBook video tutorials.  Perhaps others can chime in on this subject.
 
Since you included me on the To: line of your query, I presume you have seen my website and my book "DocBook XSL: The Complete Guide", which is available free for browsing at http://www.sagehill.net/docbookxsl/index.html.  My book covers how to use DocBook XSL to accomplish publishing tasks.  It does not cover how to create DocBook markup or which elements to use for each purpose.  But it does describe most of the interesting and useful features of DocBook, especially in  Part IV "Special DocBook features".  You might browse that part, skipping over the implementation details for now, in order to get a feel for what you do with DocBook tools.
 
Regarding open-source trial software, I would suggest you separate "open-source" and "trial".  The open-source tools such as the DocBook XSL stylesheets and the FOP XSL-FO processor are fully functioning free products and don't need a trial version.  There are many commercial products that support DocBook that are available in trial versions that are nearly fully functional during the trial period.  You can get a really good feel for what they can do with the trial versions.

My name is Andrew B. Shipton, and I am a Technical Support Engineer for IPexpert, Inc. contacting all of you on behalf of our company.  We are considering the use of DocBook as a new tool in the creation of our technical workbooks and we just had some brief inquiries beforehand.  We hope that this E-Mail is directed to the appropriate individuals, and we do apologize if it has been sent to any wrong parties.  If this message has not reached any intended recipients, then please be so kind as to forward it on to the correct persons.  We did call the Oasis office and were advised to submit this E-Mail as a result in order to obtain more information.

 

We were wondering if there was a video tutorial of some nature that we could view in order to learn more about DocBook before getting started with it.  We have not been able to locate one online anywhere thus far after reviewing the DB site and other related ones.  We also wanted to ask about any type of open-source trial software that would enable us to become familiar with DB as well.  We want to utilize every tool available in order to get the most out of this schema.  Please let us know of any other similar resources that will help us to achieve this goal as well.  We are excited to implement this technology throughout our organization as it will prove to be effective in many ways.  We have already toured your sites and we are searching for additional resources to compliment what we have learned so far.
