I agree with Rob, creating a document in KOffice or Lotus Symphony and then 
opening it in OpenOffice, MS Office or anything else is not very exciting
for 
a demo (and it's sometimes risky).

I suggest interop demos in 3 possible other areas:

1) ODF automatic report generation in business intelligence applications (BI

reporting was a very dynamic marketplace for years, and open source
solutions 
such as BIRT, Jasper Reports, etc, are now rocketing beside the old 
proprietary software). ODF (with appropriate XML report templates and APIs) 
should be actively promoted as a well suited format for general purpose 
reports;

2) document management (tagging, indexing, full text or metadata-based 
searching);

3) automatic document processing by back-office business applications (ex: 
enterprise database feeding from ordinary business documents, document-based

process management).
